Family Friendly Tacos

These little cups can be a fun snack or full meal; they're nutritious, and even have sneaky ingredients in there that your children might not eat otherwise.
Ingredients
- 500g beef mince
- 2 tablespoons olive oil
- 1 brown onion, finely chopped
- 3 garlic cloves, crushed
- 3 teaspoons ground cumin
- 3 teaspoons paprika
- ¼ tsp chilli powder (optional)
- 200g canned kidney beans, drained, rinsed
- 1 red capsicum, diced
- 1 courgette, diced
- 1 tin organic tomatoes
- 2 tablespoons tomato paste
- 1 packet of multigrain wraps.
- Sour cream

Directions
- Add olive oil & onion to a large pot & sauté until onions are soft.
- Add garlic, cumin, paprika & chilli and fry off for 1-2 minutes until fragrant.
- Add beef mince and brown.
- Add remaining ingredients and simmer for 30-45 minutes.
- Preheat oven to 160 deg C.
- Prepare your taco cups by cutting wraps into ¼’s and pressing into muffin tins.
- Bake in the oven for 5-10 minutes or until slightly brown. Leave them to cool in the muffin tins before serving.
- Spoon mince into cups and top with some grated cheese, dollop of sour cream & coriander.
