Nourishing Protein Rich Oats

Ingredients - Oat mixture
- ½ cup rolled oats (not quick oats)
- 1 cup of milk of your choice (I suggest almond or oat here)
- 1 tsp cinnamon
- 1 x scoop collagen powder
- 1tsp nut butter
- 1 tbsp of a mix of seeds (such as hemp, chia, pumpkin, sunflower, flax)
- Optional: 1 whisked raw egg (This will add an additional 6g protein to your breakfast to keep you sustained for longer)
Toppings
- Berries, bananas, or seasonal fruit
- Natural Greek yoghurt or coconut yoghurt.
- Natural nut butter (if you didn't put natural almond or peanut butter into your oat mixture.
- Cacao nibs or desiccated coconut.
- 1tbs ground linseed/flaxseed meal (This is great for those experiencing constipation or have an elevated oestrogen picture)
Method
- Combine rolled oats, plant-based milk, cinnamon, collagen powder, and seeds in a microwave-safe bowl or saucepan.
- If using egg. Add the egg to the mixture and stir until well combined.
- For microwave cooking: Microwave on high for 2-3 minutes, stirring halfway through, or until oats are cooked and the mixture is creamy. For stovetop cooking: Bring the mixture to a simmer over medium heat, stirring occasionally, until the oats are cooked and the mixture thickens.
- Once cooked, top with your chosen toppings.
Tips
- For a vegan version, skip the egg and swap to the below recommended hemp protein. You’ll also need to increase the amount of plant-based milk for your desired consistency without the egg.
- To save time in the morning, prepare this breakfast as an overnight version by combining all ingredients (except the egg) in a jar or container the night before. In the morning, simply heat in the microwave or on the stove-top until warm, then add your toppings.
